Rind–on Belly
  • This is a skin on belly with rib removed.
  • Weight range 10.5 and down.
  • IMPS Reference #408.

Rindless Belly
  • This is a skinless belly with rib removed.
  • IMPS Reference #409A.

Sparerib
  • The Sparerib should contain at least 11 ribs and excessive diaphram membrane should be removed.
  • The diaphram membrane should be practically free of leaf lard.
  • Rib should have enough lean coverage to eliminate “shiners”, or bare bones.
  • IMPS Reference #416.

Sparerib-BBQ Style
  • This rib is produced by removing the breast (sternum) bone from the Sparerib.
  • IMPS Reference #416C.

Sparerib-St. Louis Style
  • The select brisket, which includes the sternum, costal cartilage and attached lean, are removed from the sparerib by making a parallel cut to the loin-belly break the length of the rib.
  • Lean should not extend more than 2 inches from the last rib.
  • IMPS Reference #416A.

Pork Brisket Bone
  • The breast bone is also referred to as the sternum bone.
  • IMPS Reference #416D.

Select Brisket Bone
  • The Select Brisket contains the sternum, costal cartilage, and attached lean.
  • IMPS Reference #416B.
